Quick Easy Tasty Zucchini Lasagne


We looked for ways to use up all the zucchini which is now in full swing in the garden. One way we enjoy using it is by making zucchini lasagne! We make a very quick version with smaller amounts of cheese and meat for both healthy and tasty eating!











Step 1 Cut the zucchini length wise and layer in the bottom of a greased baking dish

Enjoy some wine while prepping! Rose d'cabernet

fresh herbs in background to put on top

spread sauce on zucchini (make your own or use sauce from can/jar)

Add meat (We used italian sausage fried separately with onions and garlic, drained on paper, add a little for some flavor)


Add cheese (part skim mozzarella, again just some for flavor)}

Alternate layers of zucchini, sauce, cheese, and meat to your liking
